Ingredients
- 1 cup Trader Joe's Pumpkin Pancake mix
- 2 Tbs melted butter 1/4 stick
- 3/4 cup Milk or Water (use milk for pancakes and water for waffles)
- 1 Large Egg lightly beaten
Instructions
- Preheat griddle to 350° F (medium heat).
- Place 1 cup of pancake mix into a large mixing bowl.
- In a separate bowl, combine the egg, milk and melted butter and stir into the dry contents until the large lumps disappear. Do not over mix. If batter thickens while it stands, add a little more water for waffles or a little more milk for pancakes.
- Pour 1/4 cup of batter on hot, greased griddle. Pancakes are ready to turn when bubbles form and break and the edges seem cooked. Turn and brown lightly on other side.

Wife and I found ourselves in New Jersey sometime back and my younger brother sent us back down south with a unopened box of this mix. He advised we would love it, and he was correct. Most likely this is a seasonal item, but I may have to go online to find it in our neck of the woods.
