One Hundred Year Old Hamburger Casserole Recipe

Ingredients

  • 1 lb lean ground beef
  • 1 cup chopped onions
  • 4 cups diced potatoes
  • 1 cup milk
  • Salt & pepper to taste
  • 4 oz Provolone cheese (or any cheese that you prefer)
  • 1 tsp corn starch to thicken
  • 1 cup chopped green bell peppers optional

Instructions

  • Add all your ingredients ground beef, onion, and bell pepper, everything except for potatoes cheese and milk to your skillet and cook on medium heat till lightly brown.
  • Then add potatoes and cook over a low to medium heat for about 15 more minutes with the lid on stirring occasionally.
  • Then add milk right into the cast iron skillet you are cooking in and stir in evenly. Lay cheese across the top and cook in a 375-degree oven for 15 to 20 minutes. The cheese will be bubbly and will form a delicate crust on top of your 100 year old casserole.

Ingredients

  • 4 boneless pork chops
  • 1 tbsp Olive oil
  • 1/2 cup Parmesan Cheese
  • 1/2 cup Italian Bread Crumbs or equivalent
  • 1 tsp Black Pepper
  • 1 tsp Garlic Powder

Instructions

  • Mix together Parmesan cheese, bread crumbs, black pepper, and garlic powder in a disposable plastic bag.
  • Pour mixture into yellow plastic container for french toast.
  • Rub the pork chops with olive oil and then dip (coat) each one in the cheese mixture.
  • Press the mixture over the pork chops to make sure they are well covered in it.
  • Line a pan with tin foil and coat with olive oil.
  • Place the pork chops on the pan and bake at 350 degrees for 45 minutes.

Notes

This recipe brings back memories of cold weather, snow, and lots of water. If it were a song, I would name it “Snow, 8 days a Week”.

Ingredients

  • 4 medium red potatoes about 5 oz. each
  • 1 pkg 10 oz. cremini or white mushrooms, quartered
  • 2 cloves garlic finely chopped
  • Kosher salt and pepper
  • 1/4 cup dry white wine
  • 4 cups baby spinach, roughly chopped
  • 1/4 cup fresh flat leaf parsley, roughly chopped
  • 1 tbsp sour cream, plus more for serving

Instructions

  • Prick the potatoes with a fork and microwave on high until tender, 10 to 20 minutes.
  • Meanwhile, heat grill to medium-high. Place the mushrooms and garlic on a large piece of heavy-duty foil and sprinkle with 1/4 tsp each salt and pepper. Fold up the sides and add the wine, then seal the foil to form a pouch.
  • Season the steak with 1/2 tsp each salt and pepper. Grill the steak to desired doneness, 5 to 7 minutes per side for medium-rare. Transfer to a cutting board and let rest for 5 minutes before slicing.
  • While the steak is cooking, place the mushroom pouch and potatoes on the grill. Grill the potatoes until just tender, about 5 minutes. Grill the mushrooms, shaking the pouch occasionally, for 8 minutes. Transfer the mushrooms (and any juices) to the bowl and toss with the spinach, parsley and sour cream.
  • Serve the steak with the mushrooms and potatoes topped with sour cream, if desired.

Ingredients

  • spaghetti squash approximately 2lbs
  • 2 tbs butter or olive oil
  • salt and pepper to taste

Instructions

  • Preheat oven to 400°F
  • Cut spaghetti squash in half lengthwise. Scoop out seeds and stringy bits and discard (or save the seeds for roasting).
  • Drizzle the cut side with oil or spread with butter. Season with salt and pepper.
  • Place cut side down and bake 40 minutes or just until tender.
  • Cool 5 minutes. Flip spaghetti squash over and gently run a fork down the squash to separate into strands.
  • Season with additional butter, salt and pepper if desired.

Notes

Vicky and I made this on January 24, 2020. There was more than enough to go around. We like to cover it with sauce..and sometimes sprinkle with cheese.
